Ingredients for Simple Rocky Road Candy

  • Chocolate Chips – Use your favorite or whatever you have on hand. Milk, semi-sweet and dark will all work with this candy recipe.
  • Nuts – Salted peanuts are traditional. But fell free to experiment and try walnuts, almonds, or pecans.
  • Marshmallows – These are key to that classic rocky road texture and flavor.

Variations on Rocky Road Candy

Peanut Butter – Add a tablespoon of peanut butter while melting the chocolate to punch up that peanut flavor.

White Chocolate – Melt a few white chocolate chips using the same microwave method and drizzle on top once they are set.

Sprinkles – Use sprinkles to make these perfect for whatever you are celebrating — even if it’s just Tuesday!

Optional Add-Ins – Add dried cranberries or shredded coconut for a twist on the traditional rocky road flavor.

Storage:
Rocky road candy can be refrigerated in an airtight container for up to 1 month. 
You can also freeze these little treats for up to 3 months, again in parchment paper lined layers in an airtight container. Just make sure you allow time to thaw before serving.
